Egg Puff Pastry Recipe

A delightful and flaky puff pastry filled with a savory egg mixture, perfect for a breakfast treat or a light snack.


  • 1 sheet of puff pastry (store-bought or homemade)
  • 4 large eggs
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 1 green chili, finely chopped (optional)
  • 2 tablespoons of fresh cilantro, chopped
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon oil or butter
  • 1 egg (for egg wash)


  1. Prepare the Filling:
  • Heat oil or butter in a pan over medium heat.
  • Add finely chopped onion and sauté until translucent.
  • Add chopped tomato and green chili (if using), cook until the tomatoes are soft.
  • Add turmeric powder, red chili powder, salt, and black pepper. Stir well.
  • In a bowl, beat the 4 eggs and pour them into the pan with the sautéed mixture.
  • Cook the eggs, stirring continuously to scramble them until they are fully cooked but still moist.
  • Remove from heat and let it cool. Mix in the chopped cilantro.
  1. Prepare the Puff Pastry:
  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Roll out the puff pastry sheet on a lightly floured surface. Cut it into 6 equal squares.
  • Place a spoonful of the cooled egg mixture in the center of each square.
  • Fold each square diagonally to form a triangle, pressing the edges together to seal. You can use a fork to crimp the edges for a better seal and a decorative touch.
  1. Egg Wash:
  • Beat the remaining egg in a small bowl and brush it over the top of each puff pastry triangle. This will give them a nice golden color when baked.

  • Place the puff pastries on the prepared baking sheet.
  • Bake in the preheated oven for about 15-20 minutes or until they are puffed up and golden brown.
