Fluffy Homemade Biscuits Recipe

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon sugar (optional)
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk, cold
  • 1/4 cup heavy cream (for brushing)


  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar (if using).
  3. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. Pour in the cold buttermilk and gently stir until the dough just comes together. Be careful not to overmix.
  5. Turn the dough out onto a lightly floured surface. Gently pat it into a rectangle about 1-inch thick. Fold the dough in half and pat it down again. Repeat this folding process 2-3 more times to create layers.
  6. Pat the dough out to a 1-inch thickness one last time. Use a biscuit cutter or a round glass to cut out biscuits, pressing straight down without twisting. Gather any scraps, gently pat together, and cut out more biscuits.
  7. Place the biscuits on the prepared baking sheet, close together for softer sides or spaced apart for crispier edges.
  8. Brush the tops with heavy cream to help them brown.
  9. Bake for 12-15 minutes, or until the biscuits are golden brown on top.
  10. Remove from the oven and let cool slightly before serving. Enjoy warm with butter, jam, or your favorite
