French Onion Sausage Rolls Recipe

Elevate classic sausage rolls with a French twist! These savory delights feature the rich flavors of caramelized onions and herbs wrapped in golden puff pastry. Perfect for a cozy brunch or as a party appetizer.


  • 1 tablespoon olive oil
  • 2 large onions, thinly sliced
  • 1 teaspoon sugar
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 500g sausage meat (pork or beef)
  • 2 sheets ready-rolled puff pastry
  • 1 egg, beaten (for egg wash)


  1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Heat olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and caramelized, about 20-25 minutes.
  3. Stir in the sugar, balsamic vinegar, thyme leaves, salt, and pepper. Cook for another 5 minutes until the onions are deeply caramelized. Remove from heat and let cool.
  4. In a mixing bowl, combine the caramelized onions with the sausage meat, mixing until well combined.
  5. Lay out the puff pastry sheets on a clean surface. Cut each sheet in half lengthwise to make 4 long strips.
  6. Divide the sausage mixture into 4 equal portions and shape each portion into a long log along the center of each pastry strip.
  7. Brush one edge of each pastry strip with beaten egg, then fold the pastry over the sausage mixture and press the edges to seal. Trim any excess pastry if necessary.
  8. Cut each long roll into smaller pieces, about 5 cm (2 inches) long, and place them on the prepared baking tray.
  9. Brush the tops of the sausage rolls with more beaten egg for a golden finish.
  10. Bake in the preheated oven for 20-25 minutes or until the pastry is golden and the sausage is cooked through.
