  • 2 cups fresh strawberries, hulled and chopped
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup whole milk
  • Additional fresh strawberries for garnish (optional)

Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a blender or food processor, puree the chopped strawberries until smooth. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In a separate bowl, sift together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
  7. Gently fold in the pureed strawberries until evenly distributed throughout the batter.
  8. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
  9. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  10. Remove the cakes from the oven and allow them to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  11. While the cakes are cooling, prepare the cream cheese frosting. In a mixing bowl, beat together the softened cream cheese and butter until smooth and creamy.
  12. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
  13. Stir in the vanilla extract until incorporated.
  14. Once the cakes have cooled completely, spread a layer of frosting on top of one cake layer. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  15. If desired, garnish the top of the cake with additional fresh strawberries.
  16. Slice, serve, and enjoy the delightful flavors of this homemade strawberry cake!

Feel free to adjust the sweetness or texture of the frosting to your preference by adding more or less powdered sugar or adjusting the amount of strawberries in the puree for the cake batter.
