A quick and easy garlic chicken stir fry packed with fresh vegetables and savory flavors. Perfect for a weeknight dinner, this dish is both healthy and delicious.

  • 1 lb (450g) boneless, skinless chicken breasts, cut into thin strips
  • 3 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 medium carrot, julienned
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving

  1. Marinate the Chicken: In a bowl, mix the chicken strips with 1 tablespoon soy sauce, 1 tablespoon oyster sauce, and the cornstarch. Let it marinate for at least 15 minutes.
  2. Prepare the Sauce: In a small bowl, combine the remaining soy sauce, oyster sauce, and chicken broth. Set aside.
  3. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until it is cooked through and slightly browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Stir-Fry the Vegetables: In the same skillet, add the remaining vegetable oil. Add the minced garlic and stir-fry for about 30 seconds until fragrant. Add the bell peppers, broccoli, and carrot. Stir-fry for about 3-5 minutes, until the vegetables are tender-crisp.
  5. Combine Chicken and Vegetables: Return the cooked chicken to the skillet. Pour in the prepared sauce and stir well to combine. Cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the chicken and vegetables evenly.
  6. Finish with Sesame Oil: Drizzle the sesame oil over the stir fry and give it a final stir.
  7. Serve: Serve the garlic chicken stir fry hot over cooked rice or noodles.
