Ground Beef Casserole Recipe

This comforting ground beef casserole is a family favorite, perfect for busy weeknights or potluck gatherings. Packed with savory flavors and topped with a golden crust, it’s sure to satisfy everyone at the table.


  • 1 lb (450g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 1 cup frozen mixed vegetables (carrots, peas, corn)
  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Optional: chopped fresh parsley for garnish


  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
  3. Add ground beef to the skillet, breaking it apart with a spoon, and cook until browned and no longer pink. Drain any excess fat.
  4. Stir in diced tomatoes, condensed cream of mushroom soup, frozen mixed vegetables, and cooked rice. Season with salt and pepper to taste. Mix well to combine.
  5. Transfer the beef mixture into the prepared baking dish, spreading it out evenly. Sprinkle shredded cheddar cheese over the top.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, until the casserole is heated through and the cheese is melted and bubbly.
  7. Remove the foil and broil for an additional 2-3 minutes until the cheese is golden brown and bubbly.
  8. Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped fresh parsley if desired.
