Hearty Beef and Barley Soup Recipe

Warm up on chilly evenings with this comforting and nutritious beef and barley soup. Loaded with tender beef, hearty barley, and flavorful vegetables, it’s a wholesome meal in a bowl.


  • 1 lb (450g) beef stew meat, cubed
  • 1 cup pearl barley, rinsed
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish


  1. In a large pot or Dutch oven, heat some oil over medium-high heat. Add the cubed beef and cook until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
  2. In the same pot, add a bit more oil if needed and sauté the onion, carrots, celery, and garlic until softened, about 5 minutes.
  3. Return the browned beef to the pot. Add the rinsed barley, beef broth, diced tomatoes (with their juices), bay leaves, and dried thyme. Season with salt and pepper to taste.
  4. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 1 to 1 1/2 hours, stirring occasionally, until the beef is tender and the barley is cooked through.
  5. Once done, remove the bay leaves. Taste and adjust seasoning if necessary.
  6. Serve hot, garnished with chopped fresh parsley. Enjoy your hearty beef and barley soup!
