Hearty Beef Stew Recipe

  • 2 pounds stewing beef, cut into 1-inch cubes
  • 3 tablespoons all-purpose flour
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 carrots, peeled and chopped into chunks
  • 4 potatoes, peeled and chopped into chunks
  • 2 stalks celery, chopped
  • 1 cup frozen peas (optional)
  • Chopped fresh parsley, for garnish (optional)


  1. In a large bowl, season the stewing beef with salt and black pepper. Sprinkle with flour and toss until evenly coated.
  2. In a large Dutch oven or heavy-bottomed pot, heat olive oil over medium-high heat. Add the beef cubes in batches and brown them on all sides. Remove the browned beef cubes and set aside.
  3. In the same pot, add chopped onion and garlic. Sauté until softened and fragrant, about 3-4 minutes.
  4. Return the browned beef cubes to the pot. Pour in beef broth and red wine (if using), scraping up any browned bits from the bottom of the pot.
  5. Add bay leaves, dried thyme, and dried rosemary. Stir to combine.
  6. Bring the mixture to a simmer, then reduce heat to low. Cover and let it simmer gently for 1 hour, stirring occasionally.
  7. After 1 hour, add chopped carrots, potatoes, and celery to the pot. Stir to combine. Cover and simmer for an additional 30-45 minutes, or until the vegetables are tender and the beef is fork-tender.
  8. If using frozen peas, add them to the stew during the last 5 minutes of cooking.
  9. Taste and adjust seasoning with salt and pepper if needed.
