Hearty Classic Beef Stew Recipe

A warm and comforting classic beef stew, perfect for a cozy meal. Tender beef chunks, hearty vegetables, and rich broth make this a family favorite.


  • 2 lbs beef chuck, cut into 1-inch cubes
  • Salt and pepper to taste
  • 3 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 4 large carrots, peeled and cut into 1-inch pieces
  • 4 large potatoes, peeled and cut into 1-inch cubes
  • 2 stalks celery, chopped
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp all-purpose flour
  • 1 cup peas (fresh or frozen)
  • Fresh parsley, chopped (for garnish)


  1. Season the beef cubes with salt and pepper. In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Brown the beef in batches, adding more oil as needed. Remove and set aside.
  2. In the same pot, add the remaining tablespoon of olive oil. Sauté the onion until translucent, about 5 minutes. Add the garlic and cook for another minute.
  3. Stir in the tomato paste and cook for 2 minutes. Sprinkle the flour over the mixture and stir well to combine, cooking for another minute.
  4. Slowly pour in the beef broth and red wine, if using, scraping up any browned bits from the bottom of the pot.
  5. Return the beef to the pot and add the carrots, potatoes, celery, bay leaves, thyme, and rosemary. Bring to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef and vegetables are tender.
  6. Add the peas and simmer for an additional 5-10 minutes until they are heated through.
  7. Remove the bay leaves and adjust seasoning with salt and pepper, if needed.
  8. Garnish with fresh parsley before serving.
