  • 1 lb (450g) turkey breast, diced
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1/2 teaspoon ground black pepper
  • 4 cups (1 liter) chicken or turkey broth
  • 2 cups (480ml) water
  • 2 medium potatoes, peeled and diced
  • 1 cup (150g) frozen peas
  • Salt, to taste
  • Chopped fresh parsley, for garnish (optional)

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced turkey breast and cook until browned on all sides, about 5-7 minutes. Remove turkey from the pot and set aside.
  2. In the same pot, add diced onion and cook until translucent, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Stir in chopped carrots and celery. Cook for 5 minutes, stirring occasionally.
  4. Add dried thyme, dried rosemary, paprika, and black pepper. Stir well to combine.
  5. Return the cooked turkey to the pot. Pour in chicken or turkey broth and water. Bring to a boil, then reduce heat to low and simmer, covered, for 30 minutes.
  6. After 30 minutes, add diced potatoes to the stew. Simmer for another 15-20 minutes, or until the potatoes are tender.
  7. Stir in frozen peas and cook for an additional 5 minutes.
  8. Taste the stew and adjust seasoning with salt, if necessary.
  9. Serve hot, garnished with chopped fresh parsley if desired. Enjoy!
