  • 3/4 cup unsalted butter, softened
  • 1 cup whole milk, at room temperature
  • 1 teaspoon pure vanilla extract
  • 5 large egg whites, at room temperature
  • Frosting (optional):
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1/4 cup whole milk
  • 2 teaspoons pure vanilla extract

  1. Preheat and Prep:
  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans or line them with parchment paper.
  1. Mix Dry Ingredients:
  • In a large mixing bowl, combine the sifted cake flour, granulated sugar, baking powder, and salt. Mix well.
  1. Incorporate Butter:
  • Add the softened butter to the dry ingredients and mix on low speed until the mixture resembles coarse crumbs.
  1. Add Milk and Vanilla:
  • Gradually add the milk and vanilla extract, mixing on low speed until just combined. Increase to medium speed and mix for 2 minutes, ensuring the batter is smooth and fluffy.
  1. Prepare Egg Whites:
  • In a separate, clean bowl, beat the egg whites until stiff peaks form.
  1. Fold in Egg Whites:
  • Gently fold the beaten egg whites into the cake batter using a spatula. Do this in three parts, folding carefully to maintain the airiness.
  1. Bake the Cake:
  • Divide the batter evenly between the prepared cake pans.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  1. Prepare the Frosting (optional):
  • In a large bowl, beat the softened butter until creamy.
  • Gradually add the powdered sugar, mixing on low speed until combined.
  • Add the milk and vanilla extract, increasing the speed to high and beating until the frosting is light and fluffy.
  1. Assemble the Cake:
  • Once the cakes are completely cool, spread a layer of frosting on top of one of the cakes.
  • Place the second cake on top and frost the top and sides of the cake as desired.
  • Decorate with additional toppings, if desired.
  1. Serve:
    • Slice and serve the Heavenly White Cake. Enjoy!
