Heavenly White Cake

  • Cake:
  • 2 1/2 cups cake flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups whole milk, at room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 3/4 cups granulated sugar
  • 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
  • 5 large egg whites, at room temperature
  • 1/4 teaspoon cream of tartar
  • Frosting:
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 4 cups powdered sugar, sifted
  • 1/4 cup whole milk
  • 2 teaspoons vanilla extract
  • Pinch of salt


  1. Preheat Oven and Prepare Pans:
  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans, then line the bottoms with parchment paper.
  1. Sift Dry Ingredients:
  • In a medium bowl, sift together the cake flour, baking powder, and salt. Set aside.
  1. Mix Wet Ingredients:
  • In a separate bowl or measuring cup, combine the milk, vanilla extract, and almond extract. Set aside.
  1. Cream Butter and Sugar:
  • In a large mixing bowl, beat the butter on medium speed until creamy and smooth, about 1 minute.
  • Gradually add the sugar, beating until light and fluffy, about 3-4 minutes.

  • Add the milk, vanilla extract, and a pinch of salt. Increase the speed to medium-high and beat until the frosting is light and fluffy, about 3-4 minutes.

  • Place one cake layer on a serving plate or cake stand. Spread a layer of frosting over the top.
  • Place the second cake layer on top, and frost the top and sides of the cake with the remaining frosting.
