For the Bread:

  • 3 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/2 tsp salt
  • 1 tbsp sugar
  • 1 cup warm water (110°F)
  • 2 tbsp olive oil

For the Mussels:

  • 2 lbs fresh mussels, cleaned and debearded
  • 3 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 cup white wine
  • 1 cup chicken or vegetable broth
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Bread Preparation:

  1. In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy.
  2. Add olive oil, salt, and flour to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 8-10 minutes, until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
  5. Preheat your oven to 375°F (190°C).
  6. Punch down the dough and shape it into a loaf. Place it in a greased loaf pan or on a baking sheet.
  7. Let it rise for another 30 minutes, then bake for 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped.
  8. Let the bread cool on a wire rack before slicing.

Mussels Preparation:

  1. In a large pot or Dutch oven, heat olive oil and butter over medium heat.
  2. Add garlic and shallot, sautéing until fragrant and translucent, about 2-3 minutes.
  3. Pour in the white wine and broth, bringing the mixture to a boil.
  4. Add the cleaned mussels to the pot. Cover and cook for about 5-7 minutes, or until the mussels have opened. Discard any that do not open.
  5. Season with salt and pepper to taste.
  6. Garnish with freshly chopped parsley.

  1. Slice the homemade bread and serve it alongside the steamed mussels.
  2. Dip the bread into the flavorful broth from the mussels for an extra delicious experience.
