  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1/4 cup fresh lemon juice (about 1-2 lemons)
  • 1/4 cup unsalted butter, cut into small pieces
  • 1 teaspoon lemon zest
  • 1 pound green beans, trimmed
  • 1 tablespoon fresh parsley, chopped (optional)

  1. Prepare the Chicken:
  • Season the chicken breasts with salt and pepper on both sides.
  1. Cook the Chicken:
  • In a large skillet over medium-high heat, add the olive oil.
  • Once hot, add the chicken breasts and cook for 6-7 minutes per side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).
  • Remove the chicken from the skillet and set aside.
  1. Make the Lemon Garlic Butter Sauce:
  • In the same skillet, add the minced garlic and sauté for about 1 minute, or until fragrant.
  • Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet.
  • Reduce the heat to low and add the butter, stirring constantly until the butter is melted and the sauce is smooth.
  • Stir in the lemon zest.
  1. Cook the Green Beans:
  • Add the green beans to the skillet and toss to coat them in the sauce.
  • Cook for about 4-5 minutes, or until the green beans are tender but still crisp.
  1. Combine and Serve:
  • Return the chicken breasts to the skillet, spooning some of the sauce over the top.
  • Cook for an additional 2-3 minutes to reheat the chicken.
  • Garnish with chopped fresh parsley, if desired.
  • Serve immediately, ensuring each plate gets plenty of green beans and sauce.
