Ingredients:

  • 1 lb flank steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 8 flour tortillas
  • 2 tablespoons butter, divided
  • 1 avocado, sliced
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • Fresh cilantro for garnish

Instructions:

  1. Marinate the Steak: In a bowl, combine the olive oil, chili powder, garlic powder, salt, and pepper. Add the sliced steak and toss to coat. Let it marinate for at least 15 minutes.
  2. Cook the Steak: Heat a large skillet over medium-high heat. Add the marinated steak and cook for 3-4 minutes per side until cooked through. Remove from the skillet and set aside.
  3. Sauté the Vegetables: In the same skillet, add the red and green bell peppers and red onion. Sauté for about 5-7 minutes until the vegetables are tender. Remove from the skillet and set aside.
  4. Assemble the Quesadillas: Lay out 4 tortillas on a clean surface. Sprinkle an even layer of cheddar and Monterey Jack cheese on each tortilla. Distribute the cooked steak and sautéed vegetables evenly over the cheese. Top with the remaining tortillas.
  5. Cook the Quesadillas: In the skillet, melt 1 tablespoon of butter over medium heat. Place one assembled quesadilla in the skillet and cook for 2-3 minutes per side, or until the tortillas are golden brown and the cheese is melted. Repeat with the remaining quesadillas, adding more butter as needed.
  6. Serve: Cut each quesadilla into wedges. Serve with sliced avocado, sour cream, salsa, and garnish with fresh cilantro.

Enjoy your loaded steak quesadillas hot and fresh!
