Loaded Steak Quesadillas Recipe

  • 1 lb flank steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 8 flour tortillas
  • 2 tablespoons butter, divided
  • 1 avocado, sliced
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • Fresh cilantro for garnish


  1. Marinate the Steak: In a bowl, combine the olive oil, chili powder, garlic powder, salt, and pepper. Add the sliced steak and toss to coat. Let it marinate for at least 15 minutes.
  2. Cook the Steak: Heat a large skillet over medium-high heat. Add the marinated steak and cook for 3-4 minutes per side until cooked through. Remove from the skillet and set aside.

Place one assembled quesadilla in the skillet and cook for 2-3 minutes per side, or until the tortillas are golden brown and the cheese is melted. Repeat with the remaining quesadillas, adding more butter as needed.
