  • 1 lb (450g) sirloin steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro
  • Sour cream, salsa, and guacamole for serving (optional)

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced steak and cook until browned, about 2-3 minutes per side. Remove the steak from the skillet and set aside.
  2. In the same skillet, add the sliced bell peppers and onion. Cook until softened, about 5 minutes.
  3. Add the minced garlic, chili powder, cumin, salt, and pepper to the skillet. Cook for an additional 1-2 minutes, until fragrant.
  4. Return the cooked steak to the skillet and toss with the bell peppers and onions until evenly combined. Remove from heat and set aside.
  5. Place a large skillet or griddle over medium heat. Place one tortilla in the skillet and sprinkle 1/2 cup of shredded cheese evenly over the tortilla.
  6. Spoon a quarter of the steak and vegetable mixture over half of the tortilla. Sprinkle with chopped cilantro.
  7. Fold the tortilla in half over the filling, pressing down gently with a spatula. Cook for 2-3 minutes, until the bottom is golden brown and crispy.
  8. Carefully flip the quesadilla and cook for an additional 2-3 minutes on the other side, until cheese is melted and tortilla is crispy.
  9. Repeat with the remaining tortillas and filling ingredients.
  10. Once all quesadillas are cooked, remove from heat and allow to cool for a minute before slicing into wedges.
  11. Serve warm with sour cream, salsa, and guacamole on the side, if desired. Enjoy your delicious loaded steak quesadillas!
