  • For the Loppy Joe Filling:
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 cup tomato sauce
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon mustard
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • For the Burritos:
  • 6 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice (optional)
  • 1 cup black beans, drained and rinsed (optional)
  • 1/2 cup sour cream (optional)
  • 1/2 cup salsa (optional)
  • Cooking spray or a little oil for grilling

  1. Prepare the Loppy Joe Filling:
  2. In a large skillet, brown the ground beef over medium-high heat until fully cooked. Drain any excess fat.
  3. Add the chopped onion and green bell pepper to the skillet. Cook until the vegetables are softened, about 5 minutes.
  4. Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, and garlic powder. Season with salt and pepper to taste.
  5. Reduce the heat to low and let the mixture simmer for about 10-15 minutes, stirring occasionally, until it thickens.
  6. Assemble the Burritos:
  7. Lay a flour tortilla flat on a clean surface.
  8. Spoon a generous amount of the Loppy Joe filling onto the center of the tortilla.
  9. Add a handful of shredded cheddar cheese on top of the filling.
  10. If desired, add a scoop of cooked rice, black beans, a dollop of sour cream, and a spoonful of salsa.
  11. Fold the sides of the tortilla in towards the center, then roll it up tightly from the bottom to form a burrito. Repeat with the remaining tortillas and filling.
  12. Grill the Burritos:
  13. Preheat a grill pan or a skillet over medium heat. Lightly spray with cooking spray or brush with a little oil.
  14. Place the burritos seam-side down on the grill pan. Cook for about 2-3 minutes per side, or until the tortillas are golden brown and crispy, and the cheese inside is melted.
  15. Serve:
  16. Remove the burritos from the grill pan and let them cool slightly.
  17. Cut the burritos in half if desired, and serve with additional sour cream, salsa, or guacamole on the side.

Enjoy your Loppy Joe Grilled Burritos!
