Macaroni Salad Recipe

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1 tablespoon mustard (yellow or Dijon)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup chopped pickles or relish
  • 2 hard-boiled eggs, chopped (optional)
  • 1/4 cup chopped fresh parsley (optional)


  1. Cook the macaroni:
  • Bring a large pot of salted water to a boil. Add the macaroni and cook according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
  1. Prepare the dressing:
  • In a large mixing bowl, combine the mayonnaise, mustard, apple cider vinegar, sugar, salt, and black pepper. Whisk until smooth.
  1. Mix the salad:
  • Add the cooked macaroni, diced celery, red bell pepper, red onion, pickles or relish, and chopped hard-boiled eggs (if using) to the bowl with the dressing. Toss until everything is well coated with the dressing.
