Magic Custard Cake Recipe

Magic Custard Cake is a unique dessert that creates three distinct layers from a single batter: a dense layer at the bottom, a custard-like middle layer, and a light, fluffy sponge layer on top. This delightful cake is a treat for the eyes and the taste buds.

  • 4 large eggs, at room temperature
  • 1 cup (120g) powdered sugar
  • 1 stick (125g) unsalted butter, melted
  • 1 tsp vanilla extract
  • 3/4 cup (115g) all-purpose flour
  • 2 cups (500ml) milk, lukewarm
  • Powdered sugar, for dusting

  1. Preparation:
    • Preheat your oven to 325°F (160°C).
    • Grease and line an 8×8 inch (20×20 cm) baking dish with parchment paper.
  2. Separate the Eggs:
    • Carefully separate the egg whites from the yolks. Place the yolks in one bowl and the whites in another.
  3. Beat the Egg Yolks:
    • Add the powdered sugar to the bowl with the egg yolks. Beat them together until the mixture becomes pale and fluffy.
    • Mix in the melted butter and vanilla extract until well combined.
  4. Incorporate the Flour:
    • Gradually add the flour to the yolk mixture, mixing until smooth and no lumps remain.
  5. Add the Milk:
    • Slowly pour in the lukewarm milk, mixing continuously until the batter is well combined. The batter will be very thin.
  6. Whip the Egg Whites:
    • Using a clean mixer, beat the egg whites until stiff peaks form.
  7. Fold in the Egg Whites:
    • Gently fold the whipped egg whites into the batter in three additions. Be careful not to deflate the batter too much; it should be light and airy.
  8. Pour into the Baking Dish:
    • Pour the batter into the prepared baking dish, spreading it evenly.
  9. Bake:
    • Bake in the preheated oven for 50-60 minutes, or until the top is golden brown and the cake is set. It should still be slightly jiggly in the center.
  10. Cool and Serve:
    • Allow the cake to cool in the pan for at least an hour. Once cooled, refrigerate for an additional 1-2 hours to help set the layers.
    • Dust the top with powdered sugar before serving.

Enjoy your Magic Custard Cake with its delightful three-layer surprise!
