Magic Custard Cake is a unique dessert that separates into three distinct layers while baking: a dense bottom layer, a custard-like middle layer, and a light, fluffy top layer. This magical transformation happens from one single batter!


Ingredients

  • 4 large eggs, at room temperature
  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 2 cups (500ml) milk, lukewarm
  • Powdered sugar, for dusting

Instructions

  1. Preheat Oven:
    Preheat your oven to 325°F (160°C). Grease and line an 8×8 inch (20×20 cm) baking dish with parchment paper.
  2. Separate Eggs:
    Separate the eggs, placing the egg whites in one large mixing bowl and the yolks in another.
  3. Beat Egg Yolks:
    Add the granulated sugar to the bowl with the egg yolks. Beat with an electric mixer until the mixture is light and fluffy.
  4. Add Butter and Vanilla:
    Gradually add the melted butter and vanilla extract to the yolk mixture, beating until fully incorporated.
  5. Incorporate Flour:
    Sift the flour over the egg yolk mixture and beat on low speed until combined.
  6. Add Milk:
    Slowly add the lukewarm milk to the batter, mixing until everything is well combined. The batter will be quite thin.
  7. Beat Egg Whites:
    In the separate bowl with the egg whites, beat until stiff peaks form. This means when you lift the beaters, the egg whites should stand up with firm tips.
  8. Fold Egg Whites:
    Gently fold the beaten egg whites into the batter, a third at a time. The batter will look curdled, but continue folding gently until all the egg whites are incorporated.
  9. Bake:
    Pour the batter into the prepared baking dish. Bake for 50-60 minutes, or until the top is golden and the cake is set but still slightly jiggly in the center.
  10. Cool:
    Allow the cake to cool completely in the baking dish. Once cooled, refrigerate for at least 2 hours to set.
  11. Serve:
    Dust the top with powdered sugar before serving. Cut into squares and enjoy!
