These meatloaf muffins are a fun twist on the classic meatloaf. They are perfect for individual servings and great for a quick dinner or meal prep.


  • 1 pound ground beef (or ground turkey)
  • 1 small onion, finely chopped
  • 1 small green bell pepper, finely chopped
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/2 cup ketchup (for topping)


  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
  2. Mix Ingredients: In a large bowl, combine the ground beef, chopped onion, green bell pepper, breadcrumbs, milk, egg, Worcestershire sauce, 1 tablespoon ketchup, Dijon mustard, garlic powder, salt, and black pepper. Mix until well combined but do not overmix.
  3. Fill Muffin Tin: Divide the meat mixture evenly among the 12 muffin cups, pressing the mixture down gently.
  4. Add Topping: Spread a small amount of ketchup on the top of each meatloaf muffin. If desired, sprinkle shredded cheddar cheese on top.
  5. Bake: Bake in the preheated oven for 20-25 minutes, or until the meatloaf muffins are cooked through and a meat thermometer reads 160°F (71°C) in the center of a muffin.
  6. Serve: Allow the muffins to cool slightly before removing from the tin. Serve hot with your favorite side dishes.
