Mexican Taco Lasagna Recipe

Ingredients:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 (15-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 8 small flour or corn tortillas
  • 2 cups shredded Mexican cheese blend
  • Optional toppings: sliced jalapenos, chopped cilantro, diced avocado, sour cream

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray.
  2. In a large skillet, cook the ground beef over medium heat until browned, breaking it apart with a spoon as it cooks.
  3. Add the chopped onion and minced garlic to the skillet with the ground beef. Cook for an additional 2-3 minutes until the onion is translucent.
  4. Stir in the taco seasoning mix, black beans, corn, diced tomatoes, tomato sauce, chili powder, cumin, salt, and pepper. Simmer for 5-7 minutes, stirring occasionally, until the mixture is heated through and the flavors are well combined.
  5. Spread a thin layer of the beef mixture on the bottom of the prepared baking dish.
  6. Place 4 tortillas on top of the beef mixture, overlapping slightly to cover the bottom of the dish.
  7. Spread half of the remaining beef mixture over the tortillas, then sprinkle with 1 cup of shredded cheese.
  8. Repeat the layers with the remaining tortillas, beef mixture, and shredded cheese.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  10. Remove the foil and bake for an additional 5-10 minutes, until the top is golden brown.
