  • 1 can (10 ounces) Rotel Original Diced Tomatoes & Green Chilies, undrained
  • 1 can (15.25 ounces) Mexicorn, drained
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup shredded Mexican blend cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Chopped fresh cilantro (optional, for garnish)
  • Tortilla chips or crackers, for serving


  1. In a medium saucepan, combine the Rotel Original Diced Tomatoes & Green Chilies (undrained) and Mexicorn. Heat over medium heat, stirring occasionally, until heated through, about 5 minutes.
  2. Add the softened cream cheese to the saucepan, stirring until it melts and blends with the tomato-corn mixture.
  3. Stir in the shredded Mexican blend cheese until melted and smooth.
  4. Add the garlic powder, onion powder, ground cumin, salt, and pepper, stirring until well combined. Taste and adjust seasoning, if needed.
