Milk Pavé Recipe with Strawberry

Milk Pavé is a smooth and creamy dessert similar to a custard or panna cotta. This version includes a luscious strawberry topping, adding a fresh and fruity contrast to the rich milk base.

Ingredients

For the Milk Pavé:

  • 500 ml (2 cups) whole milk
  • 200 ml (3/4 cup) heavy cream
  • 100 g (1/2 cup) granulated sugar
  • 2 tablespoons cornstarch
  • 2 teaspoons gelatin powder
  • 1 teaspoon vanilla extract
  • A pinch of salt

For the Strawberry Topping:

  • 250 g (1 1/2 cups) fresh strawberries, hulled and sliced
  • 50 g (1/4 cup) granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch (optional, for thicker sauce)

Instructions

1. Prepare the Milk Pavé:

  1. In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold water. Let it sit for 5 minutes to bloom.
  2. In a medium saucepan, whisk together the whole milk, heavy cream, granulated sugar, cornstarch, and a pinch of salt.
  3. Heat the mixture over medium heat, stirring constantly until it begins to thicken and comes to a gentle boil. This should take about 5-7 minutes.
  4. Remove the saucepan from heat and stir in the bloomed gelatin until it fully dissolves.
  5. Add the vanilla extract and mix well.
  6. Pour the mixture into a square or rectangular dish lined with plastic wrap or lightly greased. Smooth the top with a spatula.
  7. Allow the Pavé to cool to room temperature, then cover and refrigerate for at least 4 hours or until set.

2. Prepare the Strawberry Topping:

  1. In a medium saucepan, combine the sliced strawberries, granulated sugar, and lemon juice.
  2. Cook over medium heat, stirring occasionally, until the strawberries release their juices and the mixture starts to thicken, about 5-7 minutes.
  3. For a thicker sauce, dissolve 1 teaspoon of cornstarch in 1 tablespoon of cold water and add it to the strawberry mixture. Cook for an additional 1-2 minutes until thickened.
  4. Remove from heat and let the topping cool to room temperature.

3. Assemble and Serve:

  1. Once the Milk Pavé is set, gently lift it out of the dish using the plastic wrap. Cut it into squares or rectangles.
  2. Serve the Pavé pieces on individual plates and spoon the strawberry topping over each piece.
  3. Garnish with fresh mint leaves if desired and serve immediately.

Enjoy this delightful and creamy Milk Pavé with a refreshing strawberry topping!
