Ingredients:

  • 1/4 cup unsalted butter, melted
  • 1/2 cup packed brown sugar
  • 6 pineapple rings (canned or fresh)
  • 6 maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup pineapple juice (reserved from the canned pineapples or fresh juice)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a standard 12-cup muffin tin or line with paper cups.
  2. In a small bowl, mix the melted butter and brown sugar. Evenly distribute this mixture among the bottom of the muffin cups.
  3. Place a pineapple ring in each muffin cup, trimming the rings if necessary to fit. Place a maraschino cherry in the center of each pineapple ring.
