Pampoen Koekies Recipe

Delicious and soft South African pumpkin cookies, perfect for a cozy tea time treat.


  • 2 cups cooked and mashed pumpkin
  • 1 cup sugar
  • 1 egg
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • Optional: raisins or chopped nuts for added texture


  1. Preheat Oven: Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. Prepare Pumpkin: In a large mixing bowl, combine the mashed pumpkin, sugar, egg, melted butter, and vanilla extract. Mix until well blended.
  3. Dry Ingredients: In another bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Combine Mixtures: Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. Be careful not to overmix. If desired, fold in raisins or chopped nuts at this stage.
  5. Shape Cookies: Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake: Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden and the cookies are set.
  7. Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
