Ingredients:

  • 2 1/4 cups (280g) all-purpose flour, plus more for dusting
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon (10g) active dry yeast
  • 1 teaspoon salt
  • 1/2 cup (120ml) warm water
  • 3/4 cup (170g) unsalted butter, cold
  • 1/2 cup (120ml) cold milk

Instructions:

  1. In a small bowl, combine the warm water and yeast. Let it sit for about 5 minutes until it becomes frothy.
  2. In a large mixing bowl, whisk together the flour, sugar, and salt.
  3. Cut the cold butter into small cubes and add them to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.
  4. Make a well in the center of the flour mixture and pour in the yeast mixture and cold milk. Stir until a dough forms.
  5. Turn the dough out onto a floured surface and knead it for about 5-7 minutes until it becomes smooth and elastic.
  6. Shape the dough into a ball, cover it with plastic wrap, and refrigerate for at least 1 hour or overnight.
  7. After the dough has chilled, roll it out on a floured surface into a large rectangle, about 1/4 inch thick.
  8. Fold the rectangle into thirds, like a letter, then roll it out again into a large rectangle.
  9. Repeat the folding process two more times, then wrap the dough in plastic wrap and refrigerate for another hour.
  10. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  11. After the final chill, roll out the dough into a large rectangle again and cut it into triangles.
  12. Roll each triangle tightly from the base to the tip to form a croissant shape.
  13. Place the croissants on the prepared baking sheet, leaving space between each one.
  14. Let the croissants rise in a warm place for about 30-45 minutes, until they double in size.
  15. Brush the croissants with beaten egg for a shiny finish.
  16. Bake in the preheated oven for 15-20 minutes, or until they are golden brown and flaky.
