Ingredients

For the Chicken Wings:

  • 2 lbs chicken wings
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 2 tbsp lime juice (freshly squeezed)
  • 4 cloves garlic (minced)
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Peruvian Green Sauce (Aji Verde):

  • 1 cup cilantro leaves (packed)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2-3 tbsp lime juice (freshly squeezed)
  • 2-3 cloves garlic
  • 1-2 jalapeños (seeded for less heat, optional)
  • 1/4 cup cotija cheese (or Parmesan cheese)
  • 1/4 cup olive oil
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper

Instructions

For the Chicken Wings:

  1. Prepare the Marinade:
  • In a large bowl, mix together the olive oil, soy sauce, lime juice, minced garlic, ground cumin, paprika, dried oregano, salt, and black pepper.
  1. Marinate the Wings:
  • Add the chicken wings to the bowl and toss to coat evenly with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for best flavor.
  1. Bake the Wings:
  • Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil or parchment paper and place a wire rack on top.
  • Arrange the marinated wings on the wire rack in a single layer. This allows the heat to circulate around the wings, making them crispy.
  • Bake for 35-45 minutes, turning the wings halfway through, until they are golden brown and cooked through (internal temperature should reach 165°F or 74°C).

For the Peruvian Green Sauce (Aji Verde):

  1. Blend the Ingredients:
  • In a blender or food processor, combine the cilantro leaves, mayonnaise, sour cream, lime juice, garlic, jalapeños, cotija cheese, olive oil, salt, and black pepper.
  • Blend until smooth and creamy. Taste and adjust seasoning if needed.
  1. Serve:
  • Transfer the green sauce to a serving bowl.
  • Serve the baked chicken wings hot with the Peruvian green sauce on the side for dipping.

Enjoy these delicious Peruvian chicken wings with the vibrant and spicy green sauce!
