Delicious and savory rice balls filled with gooey cheese and pepperoni, perfect as a snack or appetizer. These crispy on the outside, soft on the inside delights will be a hit at any gathering!

  • 2 cups cooked white rice
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup pepperoni slices, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped fresh parsley (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • Oil for frying

  1. Prepare the Rice Mixture:
  • In a large bowl, combine the cooked rice, mozzarella cheese, chopped pepperoni, Parmesan cheese, garlic powder, onion powder, parsley (if using), salt, and pepper. Mix well until all ingredients are evenly distributed.
  1. Form the Rice Balls:
  • Take a small amount of the rice mixture (about 2 tablespoons) and form it into a ball. Repeat with the remaining rice mixture until all the mixture is used.
  1. Coat the Rice Balls:
  • Place the flour in a shallow dish. Place the beaten eggs in a separate shallow dish. Place the breadcrumbs in another shallow dish.
  • Roll each rice ball in the flour, then dip it into the beaten eggs, and finally coat it with breadcrumbs. Ensure each ball is well-coated at each step.
  1. Fry the Rice Balls:
  • Heat the oil in a deep fryer or a large, deep skillet to 350°F (175°C).
  • Carefully place the rice balls in the hot oil, a few at a time, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes.
  • Use a slotted spoon to remove the rice balls from the oil and place them on a paper towel-lined plate to drain any excess oil.
  1. Serve:
  • Serve the rice balls warm, with marinara sauce or your favorite dipping sauce on the side.

Enjoy your delicious rice balls with cheese and pepperoni!
