  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 3 large carrots, peeled and sliced
  • 3 potatoes, peeled and cubed
  • 2 celery stalks, sliced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • 2 tablespoons cold water (optional, for thickening)

For the Rice:

  • 2 cups long-grain rice
  • 4 cups water or beef broth
  • 1 tablespoon butter or olive oil
  • Salt to taste

Instructions

For the Beef Stew:

  1. Brown the Beef:
  • Heat olive oil in a large pot or Dutch oven over medium-high heat.
  • Add the beef cubes and brown them on all sides. Work in batches if necessary to avoid overcrowding the pot.
  • Remove the browned beef and set it aside.
  1. Sauté the Vegetables:
  • In the same pot, add chopped onion and sauté until translucent, about 5 minutes.
  • Add minced garlic and cook for another minute until fragrant.
  1. Add Liquids and Seasonings:
  • Stir in the tomato paste and cook for 2 minutes.
  • Return the beef to the pot.
  • Add beef broth, water, thyme, rosemary, bay leaves, salt, and pepper.
  • Bring to a boil, then reduce the heat to low and simmer, covered, for 1.5 to 2 hours, or until the beef is tender.
  1. Add Vegetables:
  • Add the carrots, potatoes, and celery to the pot.
  • Continue to simmer for another 30 minutes, or until the vegetables are tender.
  1. Thicken the Stew (Optional):
  • If you prefer a thicker stew, mix 2 tablespoons of flour with 2 tablespoons of cold water to make a slurry.
  • Stir the slurry into the stew and cook for an additional 10 minutes until the stew thickens.

For the Rice:

  1. Prepare the Rice:
  • Rinse the rice under cold water until the water runs clear.
  • In a medium pot, bring water or beef broth to a boil.
  • Add the rice, butter or olive oil, and salt.
  • Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  1. Fluff the Rice:
  • Remove the pot from the heat and let it sit, covered, for 5 minutes.
  • Fluff the rice with a fork before serving.

To Serve:

  • Spoon a generous portion of rice onto a plate or into a bowl.
  • Ladle the beef stew over the rice.
  • Garnish with fresh parsley if desired.
