Rotisserie Chicken and Stuffing Casserole Recipe

This comforting casserole combines the convenience of rotisserie chicken with the classic flavors of stuffing, creating a hearty and delicious meal that’s perfect for any occasion.


  • 1 rotisserie chicken, shredded (about 4 cups)
  • 1 package (6 ounces) stuffing mix
  • 1 can (10.5 ounces) cream of chicken soup
  • 1/2 cup chicken broth
  • 1/2 cup milk
  • 1 cup frozen mixed vegetables (carrots, peas, corn)
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish


  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. Prepare the stuffing mix according to package instructions. Spread the prepared stuffing evenly in the bottom of the prepared baking dish.
  3. In a large mixing bowl, combine the shredded rotisserie chicken, cream of chicken soup, chicken broth, milk, frozen mixed vegetables, and half of the shredded cheddar cheese. Season with salt and pepper to taste. Mix until well combined.
  4. Spread the chicken mixture evenly over the stuffing layer in the baking dish.
  5. Sprinkle the remaining shredded cheddar cheese over the top of the chicken mixture.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, or until the casserole is bubbly and the cheese is melted and golden brown.
  8. Let the casserole cool for a few minutes before serving. Garnish with chopped fresh parsley if desired.
