Sausage and Egg Roll

A hearty and flavorful breakfast roll perfect for a quick morning meal or a satisfying brunch.


  • 4 sausage links or 1/2 lb of ground sausage
  • 4 large eggs
  • 4 slices of cheddar cheese (optional)
  • 4 large flour tortillas or sandwich rolls
  • 1/4 cup milk (optional, for fluffier eggs)
  • Salt and pepper to taste
  • 2 tablespoons butter or oil
  • Optional toppings:
  • Salsa
  • Hot sauce
  • Avocado slices
  • Spinach leaves


  1. Prepare the Sausage:
  • If using sausage links, cook them in a skillet over medium heat until browned and cooked through, about 8-10 minutes. If using ground sausage, cook in a skillet until browned and crumbled, about 7-8 minutes. Drain any excess fat.
  1. Cook the Eggs:
  • In a bowl, beat the eggs with milk (if using), and season with salt and pepper.
  • In a non-stick skillet, melt butter or heat oil over medium heat. Pour in the eggs and cook, stirring gently, until they are just set and slightly runny (they will continue to cook off the heat).
  1. Assemble the Rolls:
  • Warm the tortillas or sandwich rolls in the microwave or oven to make them more pliable.
  • If using cheese, place a slice on each tortilla or roll.
  • Divide the cooked sausage evenly among the tortillas or rolls.
  • Spoon the scrambled eggs on top of the sausage.
  • Add any optional toppings you like.
  1. Roll and Serve:
  • If using tortillas, fold in the sides and then roll up tightly from the bottom. If using sandwich rolls, simply close them up.
  • Serve immediately, with additional toppings or sauces on the side if desired.
