  • 4 Italian sausages (hot or mild, according to preference)
  • 2 bell peppers (any color), sliced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional: grated Parmesan cheese for serving
  • Optional: crusty bread or cooked pasta for serving

  1. Heat a tablespoon of olive oil in a large skillet or Dutch oven over medium heat.
  2. Add the sausages to the skillet and cook until browned on all sides, about 5 minutes. Remove the sausages from the skillet and set aside.
  3. In the same skillet, add a bit more olive oil if needed, then add the sliced peppers and onions. Cook, stirring occasionally, until the vegetables are softened and slightly caramelized, about 8-10 minutes.
  4. Add the minced garlic to the skillet and cook for another 1-2 minutes until fragrant.
  5. Stir in the diced tomatoes, tomato sauce, dried oregano, and dried basil. Season with salt and pepper to taste.
  6. Return the sausages to the skillet, nestling them into the sauce and vegetables. Bring the mixture to a simmer.
  7. Cover and let simmer over low heat for 20-25 minutes, or until the sausages are cooked through and the flavors have melded together.
  8. Serve the sausage and pepper mixture hot, garnished with grated Parmesan cheese if desired. Enjoy with crusty bread or cooked pasta on the side.
