For the pastry:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1/4 cup ice water

For the filling:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked chicken, shredded
  • 1 cup mixed vegetables (such as peas, carrots, and corn)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup chicken or vegetable broth
  • 1 tablespoon all-purpose flour
  • 1 egg, beaten (for egg wash)

  1. Prepare the pastry dough:
    • In a large mixing bowl, combine the flour and salt. Add the cubed butter and use a pastry cutter or fork to cut it into the flour until the mixture resembles coarse crumbs.
    • Gradually add the ice water, 1 tablespoon at a time, mixing until the dough comes together. Be careful not to overwork the dough. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Make the filling:
    • In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
    • Stir in the shredded chicken, mixed vegetables, dried thyme, salt, and pepper. Cook for another 3-4 minutes until the vegetables are tender.
    • In a small bowl, whisk together the chicken or vegetable broth and flour until smooth. Pour this mixture into the skillet with the chicken and vegetables, stirring constantly. Cook until the mixture thickens, about 2-3 minutes. Remove from heat and let cool slightly.
  3. Assemble the hand pies:
    • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • On a lightly floured surface, roll out the chilled pastry dough to about 1/8 inch thickness. Use a round cutter or a glass to cut out circles of dough.
    • Spoon a generous tablespoon of the filling onto one half of each dough circle, leaving a small border around the edges. Fold the other half of the dough over the filling to form a half-moon shape. Use a fork to crimp the edges to seal the pies.
    • Place the assembled hand pies onto the prepared baking sheet. Brush the tops with the beaten egg for a golden finish.
  4. Bake the hand pies:
    • Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crisp.
    • Remove from the oven and let cool slightly before serving. Enjoy your savory hand pies warm or at room temperature.

These savory hand pies are versatile and can be filled with your favorite ingredients, making them perfect for using up leftovers or creating a custom flavor combination. Serve them as a snack, appetizer, or even a main course alongside a fresh salad for a delicious meal.
