  • 2 lbs beef chuck roast, trimmed of excess fat
  • 1 onion, sliced
  • 3 cloves garlic, minced

  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme

  • 2 tablespoons olive oil


  1. Season the beef chuck roast generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side. Transfer the beef to the slow cooker.
  3. In the same skillet, add onions, garlic, carrots, and celery. Sauté until softened, about 5 minutes.
