Cheesecake Recipe

  • For the crust:
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • For the filling:
  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • ¼ cup all-purpose flour

Preparing the Crust:

  1. Preheat Oven: Preheat your oven to 325°F (163°C).
  2. Mix Ingredients: In a medium bowl, combine the graham cracker crumbs, ¼ cup of sugar, and melted butter. Mix until well combined.
  3. Press into Pan: Press the mixture into the bottom of a 9-inch springform pan to form an even layer.
  4. Bake Crust: Bake the crust in the preheated oven for about 10 minutes. Remove from oven and let cool.

Making the Filling:

  1. Mix Cream Cheese and Sugar: In a large mixing bowl, beat the cream cheese and 1 cup of sugar together until smooth and creamy.
  2. Add Vanilla and Eggs: Add the vanilla extract and mix. Add the eggs one at a time, beating well after each addition.
  3. Incorporate Sour Cream and Flour: Add the sour cream and mix until combined. Then add the flour and mix until smooth.

Assembling and Baking:

  1. Pour Filling: Pour the cheesecake filling over the cooled crust in the springform pan.
  2. Bake Cheesecake: Bake in the preheated oven for about 55-60 minutes, or until the center is set and the top is slightly golden.
  3. Cool in Oven: Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about 1 hour. This helps prevent cracking.
  4. Refrigerate: Remove the cheesecake from the oven and let it cool completely at room temperature. Then refrigerate for at least 4 hours, preferably overnight.

  1. Serve and Enjoy: Remove the cheesecake from the springform pan, slice, and serve. You can top it with fresh fruit, fruit sauce, or enjoy it plain.

Enjoy your homemade cheesecake!
