Sky High Yorkshire Pudding Recipe

These Yorkshire puddings are tall, crispy on the outside, and soft on the inside, making them the perfect accompaniment to a roast dinner or any meal.

  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 cup beef drippings or vegetable oil

  1. Preheat Oven:
  • Preheat your oven to 450°F (230°C).
  1. Prepare the Batter:
  • In a medium bowl, whisk together the eggs, flour, milk, and salt until the mixture is smooth and free of lumps. Let the batter rest for at least 30 minutes at room temperature. This helps the batter to rise better.
  1. Prepare the Muffin Tin:
  • Place about 1 teaspoon of beef drippings or vegetable oil into each cup of a 12-cup muffin tin. The fat should cover the bottom of each cup. Place the muffin tin in the preheated oven and heat until the oil is very hot, almost smoking (about 5-10 minutes).
  1. Fill the Muffin Tin:
  • Carefully remove the hot muffin tin from the oven. Quickly pour the batter into the cups, filling each about 2/3 full. The batter will sizzle as it hits the hot oil, which is essential for creating the high rise and crispy texture.
  1. Bake the Puddings:
  • Return the muffin tin to the oven and bake for 20-25 minutes, or until the puddings have risen and are golden brown and crisp. Do not open the oven door during the first 15 minutes of baking, as this can cause the puddings to deflate.
  1. Serve Immediately:
  • Remove the Yorkshire puddings from the oven and serve immediately. They are best enjoyed fresh and hot, straight from the oven.

  • Ensure your oven is fully preheated before baking.
  • Letting the batter rest is crucial for achieving the best rise.
  • Use beef drippings for a more traditional flavor, but vegetable oil works well too.
  • Serve with roast beef and gravy for a classic meal.
