Ingredients:

  • 3-4 pounds chuck roast
  • 1 onion, chopped
  • 3-4 carrots, peeled and chopped into chunks
  • 3-4 potatoes, peeled and chopped into chunks
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1/2 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Season the chuck roast generously with salt and pepper. Sear the roast in the skillet until browned on all sides, about 3-4 minutes per side. Transfer the roast to the slow cooker.
  2. In the same skillet, add chopped onion and garlic. Sauté until softened and fragrant, about 2-3 minutes.
  3. Deglaze the skillet with red wine (if using), scraping up any browned bits from the bottom. Allow the wine to simmer for 1-2 minutes.
  4. Transfer the onion and garlic mixture to the slow cooker, placing it on top of the roast.
  5. Add chopped carrots and potatoes to the slow cooker, arranging them around the roast.
  6. In a separate bowl, mix together beef broth, tomato paste, Worcestershire sauce, dried thyme, and dried rosemary. Pour the mixture over the roast and vegetables in the slow cooker.
  7. Cover and cook on low for 8 hours or on high for 4-5 hours, or until the beef is tender and easily shreds with a fork.
  8. Once cooked, carefully remove the roast from the slow cooker and transfer it to a serving platter. Use a slotted spoon to remove the vegetables and place them alongside the roast.
  9. If desired, strain the cooking liquid to remove any excess fat. Serve the pot roast with the strained cooking liquid as gravy.
  10. Enjoy your delicious slow cooker pot roast with your favorite sides and a glass of red wine!
