Special Fruit Pavé Recipe

A delightful and refreshing dessert, the Special Fruit Pavé combines layers of creamy goodness with a variety of fresh fruits, creating a visually appealing and delicious treat perfect for any occasion.

  • 1 cup of graham cracker crumbs (or digestive biscuit crumbs)
  • 1/4 cup of melted butter
  • 1 can of sweetened condensed milk (14 oz)
  • 1 cup of heavy cream
  • 1/2 cup of whole milk
  • 2 tablespoons of cornstarch
  • 1 teaspoon of vanilla extract
  • 2 cups of mixed fresh fruits (e.g., strawberries, blueberries, kiwi, mango, pineapple)
  • 1/4 cup of sugar (optional, for macerating fruits)
  • Fresh mint leaves for garnish (optional)

1. Prepare the Crust:

  1. In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are well-coated and the mixture resembles wet sand.
  2. Press the mixture firmly into the bottom of a 9×9 inch (23×23 cm) square baking dish to form an even crust. Refrigerate while preparing the filling.

2. Prepare the Creamy Filling:

  1. In a medium saucepan, combine the sweetened condensed milk, heavy cream, and whole milk. Heat over medium heat, stirring constantly until the mixture begins to steam.
  2. In a small bowl, dissolve the cornstarch in 2 tablespoons of water to form a slurry.
  3. Gradually add the cornstarch slurry to the saucepan, stirring constantly until the mixture thickens and starts to bubble. Continue cooking for 2-3 minutes until the mixture is thick and creamy.
  4. Remove from heat and stir in the vanilla extract. Allow the mixture to cool slightly.

3. Assemble the Pavé:

  1. Pour half of the creamy filling over the prepared crust, spreading it evenly with a spatula.
  2. Arrange half of the mixed fresh fruits over the filling in an even layer.
  3. Pour the remaining creamy filling over the fruit layer, spreading it evenly.
  4. Top with the remaining mixed fresh fruits, arranging them decoratively.

4. Chill and Serve:

  1. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the pavé to set and the flavors to meld.
  2. Before serving, if desired, sprinkle the fruits with 1/4 cup of sugar and let sit for 10 minutes to macerate, enhancing their natural sweetness.
  3. Garnish with fresh mint leaves if desired.
  4. Cut into squares and serve chilled.

Enjoy your Special Fruit Pavé, a delightful dessert that’s sure to impress!
