  • 2 cups fresh strawberries, hulled and diced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 package (3 ounces) strawberry gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • Whipped cream, for serving (optional)
  • Fresh mint leaves, for garnish (optional)

  1. In a medium-sized bowl, combine the diced strawberries, granulated sugar, lemon juice, and vanilla extract. Stir gently to coat the strawberries evenly. Let them sit for about 10-15 minutes to allow the flavors to meld together.
  2. In a separate bowl, dissolve the strawberry gelatin in boiling water, stirring until completely dissolved.
  3. Once the gelatin is dissolved, stir in the cold water. Let the mixture cool slightly.
  4. Prepare your molds. You can use silicone molds, ice cube trays, or even small paper cups for shaping the strawberry bombs.
  5. Place a spoonful of the strawberry mixture into each mold, filling them about halfway.
  6. Carefully pour the gelatin mixture over the strawberries in the molds, ensuring they are evenly covered.
  7. Refrigerate the strawberry bombs for at least 2-3 hours, or until set.
  8. Once set, remove the strawberry bombs from the molds by gently pushing from the bottom or running warm water over the outside of the molds to loosen them.
  9. Serve the strawberry bombs chilled, topped with a dollop of whipped cream and garnished with fresh mint leaves if desired.

Enjoy the explosive burst of strawberry flavor with every bite of these delightful strawberry bombs!
