Stuffed Bell Peppers Recipe

Delicious and hearty stuffed bell peppers filled with a savory mixture of ground beef, rice, and vegetables, baked to perfection and topped with melted cheese. Perfect for a wholesome family dinner.

Ingredients:

  • 4 large bell peppers (any color)
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup canned diced tomatoes, drained
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Rinse and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 2-3 minutes.
  4. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  5. Stir in the cooked rice, diced tomatoes, dried oregano, dried basil, salt, and pepper. Mix well and cook for another 5 minutes until heated through.
  6. Spoon the beef and rice mixture into each bell pepper, filling them to the top.
  7. Place the stuffed peppers in a baking dish, and pour a small amount of water (about 1/4 cup) into the bottom of the dish to help steam the peppers.
  8. Cover the baking dish with aluminum foil and bake for 30 minutes.
  9. Remove the foil, sprinkle the shredded cheese on top of each pepper, and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh parsley if desired, and serve hot. Enjoy!
