Stuffed Pepper Casserole Recipe

A delicious twist on the classic stuffed peppers, this casserole combines all the flavors in an easy-to-make dish perfect for busy weeknights.


  • 1 pound ground beef
  • 1 onion, diced
  • 2 bell peppers, diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped (for garnish, optional)


  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. In a large skillet, cook the ground beef over medium heat until browned and no longer pink. Drain excess fat.
  3. Add diced onion, bell peppers, and minced garlic to the skillet with the ground beef. Cook until vegetables are tender, about 5 minutes.
  4. Stir in the cooked rice, diced tomatoes, tomato sauce, Italian seasoning, salt, and black pepper. Cook for an additional 5 minutes, allowing flavors to blend.
  5. Transfer the mixture to the prepared baking dish, spreading it out evenly.
  6. Sprinkle shredded cheddar cheese over the top of the casserole.
  7. Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
