STUFFED PEPPER CASSEROLE

This Stuffed Pepper Casserole is a hearty and flavorful dish, perfect for a family dinner. It combines all the delicious elements of traditional stuffed peppers in an easy-to-make casserole form.


Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 cup uncooked white rice
  • 2 cups beef broth (or chicken broth)
  • 3 bell peppers (red, yellow, or green), diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 tsp dried oregano

  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp olive oil

Instructions

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C).
  2. Cook Rice:
    Cook the rice according to package instructions, using beef broth instead of water for added flavor. Set aside.
  3. Cook Ground Beef:
    In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  4. Sauté Vegetables:
    Add the diced bell peppers, chopped onion, and minced garlic to the skillet. Cook until the vegetables are softened, about 5-7 minutes.
  5. Add Tomatoes and Seasoning:
    Stir in the diced tomatoes (with their juice), tomato sauce, oregano, basil, salt, and pepper. Let the mixture simmer for about 5 minutes.
  6. Combine with Rice:
    In a large bowl, combine the cooked rice with the beef and vegetable mixture. Mix until well combined.
  7. Assemble Casserole:
    Transfer the mixture into a greased 9×13-inch baking dish. Spread it out evenly.
  8. Add Cheese:
    Sprinkle the shredded mozzarella and cheddar cheese evenly over the top of the casserole.
  9. Bake:
    Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
