Stuffed Potato Recipe

Stuffed potatoes are a delicious and versatile dish perfect for any meal. These baked potatoes are filled with a savory mixture of cheese, bacon, and green onions, creating a satisfying and flavorful bite.


  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup butter
  • 1/4 cup chopped green onions
  • Salt and pepper to taste


  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Bake Potatoes: Scrub the potatoes clean and pierce them several times with a fork. Place them on a baking sheet and bake for about 1 hour, or until the potatoes are tender when pierced with a fork.
  3. Prepare Filling:
    • While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels, then crumble into small pieces.
    • Chop the green onions and set aside.
  4. Hollow Out Potatoes: Once the potatoes are done baking, let them cool slightly. Cut each potato in half lengthwise and carefully scoop out the insides, leaving a thin shell of potato. Place the scooped-out potato flesh in a large mixing bowl.
  5. Mix Filling: Add the butter, sour cream, milk, and half of the shredded cheddar cheese to the potato flesh in the mixing bowl. Mash until smooth. Stir in the crumbled bacon and chopped green onions. Season with salt and pepper to taste.
  6. Stuff Potatoes: Spoon the potato mixture back into the potato shells, mounding it slightly. Sprinkle the remaining cheddar cheese on top.
  7. Bake Again: Place the stuffed potatoes back on the baking sheet and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  8. Serve: Remove from the oven and let cool for a few minutes before serving.
