Taco Casserole Recipe

Ingredients:

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 packet (1 ounce) taco seasoning
  • 1 can (10 ounces) diced tomatoes with green chilies, drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn kernels, drained
  • 1 bag (10 ounces) corn chips (such as Fritos), lightly crushed
  • 2 cups shredded Mexican cheese blend
  • Optional toppings: sliced jalapeños, diced tomatoes, sour cream, guacamole, chopped cilantro

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess grease.
  3. Stir in the taco seasoning, diced tomatoes with green chilies, black beans, and corn kernels. Cook for an additional 3-4 minutes, allowing the flavors to meld together. Remove from heat.
  4. Spread half of the crushed corn chips evenly into the bottom of the prepared baking dish.
  5. Spoon half of the beef mixture over the corn chips, spreading it out evenly.
  6. Sprinkle half of the shredded cheese over the beef mixture.
  7. Repeat the layers with the remaining crushed corn chips, beef mixture, and shredded cheese.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Remove the foil and bake for an additional 5 minutes to crisp up the top layer.
  10. Once done, remove from the oven and let it cool for a few minutes before serving.
