Ingredients

For the Meatballs:

  • 1 lb (450g) ground beef or pork (or a mix of both)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground ginger
  • 1 tbsp soy sauce

For the Sweet and Sour Sauce:

  • 1 cup pineapple juice
  • 1/2 cup ketchup
  • 1/3 cup rice vinegar or white vinegar
  • 1/2 cup brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
  • 1 small bell pepper, chopped
  • 1 cup pineapple chunks (optional)

Instructions

  1. Prepare the Meatballs:
  2. Preheat your oven to 400°F (200°C).
  3. In a large bowl, combine the ground meat, breadcrumbs, milk, egg, chopped onion, minced garlic, salt, black pepper, ground ginger, and soy sauce.
  4. Mix until well combined. Using your hands, form the mixture into small meatballs, about 1 inch in diameter.
  5. Place the meatballs on a baking sheet lined with parchment paper or lightly greased.
  6. Bake in the preheated oven for 15-20 minutes, or until browned and cooked through.
  7. Prepare the Sweet and Sour Sauce:
  8. In a medium saucepan, combine the pineapple juice, ketchup, rice vinegar, brown sugar, and soy sauce.
  9. Bring to a simmer over medium heat, stirring occasionally.
  10. Add the chopped bell pepper and pineapple chunks (if using).
  11. Stir in the cornstarch mixture and cook until the sauce has thickened, about 3-5 minutes.
  12. Combine Meatballs and Sauce:
  13. Once the meatballs are cooked, add them to the saucepan with the sweet and sour sauce.
  14. Gently stir to coat the meatballs with the sauce.
  15. Simmer for an additional 5-10 minutes, allowing the flavors to meld together.
  16. Serve:
  17. Serve the tangy sweet and sour meatballs hot, garnished with chopped green onions or sesame seeds if desired.
  18. They can be served over rice, noodles, or as an appetizer on their own.
