This hearty breakfast casserole is perfect for feeding a crowd or for a cozy family brunch. Packed with savory sausage, fluffy eggs, cheese, and crispy tater tots, it’s a comforting dish that will satisfy everyone at the table.


  • 1 pound breakfast sausage
  • 1 (32-ounce) bag frozen tater tots
  • 8 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional toppings: chopped green onions, salsa, sour cream


  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick cooking spray.
  2. In a large skillet, cook the breakfast sausage over medium heat until browned and cooked through. Use a spoon to break the sausage into smaller pieces as it cooks. Once done, remove from heat and drain any excess grease.
  3. Spread the cooked sausage evenly in the bottom of the prepared baking dish.
  4. Arrange the frozen tater tots in a single layer over the sausage.
  5. In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
