Texas Roadhouse Copycat, Potato Skins Recipe

Crispy, cheesy, and loaded with flavor, these homemade potato skins are a perfect appetizer or snack for any occasion!


  • 4 large russet potatoes
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 1/4 cup chopped green onions
  • Sour cream (optional)


  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes clean and pat them dry with a paper towel.
  3. Pierce each potato several times with a fork, then rub them with vegetable oil and sprinkle with salt and pepper.
  4. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.
  5. Remove the potatoes from the oven and let them cool slightly until they are safe to handle.
  6. Cut each potato in half lengthwise, then scoop out the flesh, leaving about 1/4 inch of potato attached to the skin.
  7. Place the potato halves skin-side up on a baking sheet lined with parchment paper.
  8. Sprinkle shredded cheddar cheese evenly over each potato skin, followed by crumbled bacon and chopped green onions.
  9. Return the potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let cool slightly before serving.
