  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 4 slices of bacon, cooked and crumbled
  • 1/4 cup chopped green onions
  • 1/4 cup butter
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional for a bit of heat)

  1. Preheat the Oven:
  • Preheat your oven to 400°F (200°C).
  1. Prepare the Potatoes:
  • Scrub the potatoes thoroughly under running water to remove any dirt.
  • Pat the potatoes dry with a clean towel.
  • Pierce each potato several times with a fork to allow steam to escape during baking.
  1. Season and Bake the Potatoes:
  • Rub each potato with olive oil, and then sprinkle with salt and pepper.
  • Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.
  1. Prepare the Toppings:
  • While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain excess grease. Once cooled, crumble the bacon.
  • In a small saucepan, melt the butter over low heat. Add the milk, garlic powder, onion powder, paprika, and cayenne pepper. Stir until well combined and heated through.
  1. Assemble the Balked Potatoes:
  • Once the potatoes are done baking, remove them from the oven and let them cool for a few minutes.
  • Slice each potato lengthwise down the center and gently push the ends together to open up the potato.
  • Fluff the inside of the potatoes with a fork.
  1. Add the Toppings:
  • Drizzle the butter and milk mixture over the fluffy potato insides.
  • Sprinkle the shredded cheddar cheese over the top, allowing it to melt slightly from the heat of the potato.
  • Add a dollop of sour cream to each potato.
  • Top with crumbled bacon and chopped green onions.
  1. Serve and Enjoy:
  • Serve the balked potatoes hot as a main dish or a hearty side.
  • Enjoy the rich and savory flavors of your customized baked potatoes!

This recipe combines the classic comfort of baked potatoes with flavorful toppings, creating a dish that’s sure to be a hit. Enjoy!
