Turkish Bread (Pide) Recipe

This recipe will guide you through making traditional Turkish Pide, a soft and fluffy bread that’s perfect for accompanying any meal.


  • 500 grams (4 cups) all-purpose flour
  • 1 packet (7 grams or 2 1/4 teaspoons) active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 300 ml (1 1/4 cups) warm water (about 110°F or 45°C)
  • 1 egg yolk (for glazing)
  • 2 tablespoons yogurt (for glazing)
  • Sesame seeds or Nigella seeds (optional, for topping)


  1. Prepare the Yeast Mixture:
  • In a small bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for about 10 minutes until it becomes frothy.
  1. Make the Dough:
  • In a large mixing bowl, combine the flour and salt.
  • Create a well in the center of the flour mixture and add the frothy yeast mixture and olive oil.
  • Mix until a dough forms. You can use your hands or a stand mixer with a dough hook attachment.
  1. Knead the Dough:
  • Knead the dough on a floured surface for about 10 minutes (or 5 minutes if using a stand mixer) until it becomes smooth and elastic.
  • If the dough is too sticky, add a little more flour. If it’s too dry, add a small amount of water.
  1. Let the Dough Rise:
  • Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-1.5 hours, or until it has doubled in size.
  1. Shape the Pide:
  • Preheat your oven to 220°C (430°F) and line a baking sheet with parchment paper.
  • Punch down the risen dough and divide it into two equal parts.
  • Shape each part into a round or oval flatbread, about 1 cm (1/2 inch) thick.
  • Place the shaped dough on the prepared baking sheet.
  1. Prepare the Glaze:
  • In a small bowl, mix the egg yolk and yogurt.
  • Brush the glaze over the top of the shaped dough.
  1. Add Toppings (Optional):
  • Sprinkle sesame seeds or Nigella seeds over the glazed dough for added flavor and texture.
  1. Bake the Pide:
  • Bake in the preheated oven for about 15-20 minutes, or until the bread is golden brown and has a hollow sound when tapped on the bottom.
  1. Cool and Serve:
  • Allow the bread to cool slightly on a wire rack before serving.
